Michael’s ten-year partnership with Andrew Brownsword led to the creation from the ground up of the ABode group of hotels and Michael Caines restaurants, Café Bars, and Taverns, with Michael closely involved in every decision along the way. He is thus as comfortable working in the realm of fine dining of the highest order as he is with delivering more informal foods in casual environments. He has also worked in partnership with large hotel groups such as the Marriott to create and deliver his style of fine dining within a corporate framework without ever compromising on his style and cuisine. Michael has worked with numerous independent hotels and restaurants helping to create business frameworks that yields results.

PALE HALL
Palé Hall is a grand historic grade two listed country house at Llandderfel, near Bala situated in the Dee Valley and at the foot of the Snowdonia National Park.
Michael and his team helped Alan and Angela bring to life their vision of Palé Hall and their passion for great hospitality. Michael and the team consulted on several elements including a pre-opening basis to implement standard operating procedures through all departments, health and safety compliance, opening contracts and ordering.
Michael and his team continued to support Palé Hall through their first year of opening focusing on the restaurant and food and beverage offering to create a relaxed and friendly dining experience. Michael mentored Head chef Gareth Stevenson for many years and so was proud for Gareth to take on the reins at the helm of the Palé kitchen. Gareth worked closely with with local farmers, growers, fishermen and food producers in North Wales to ensure that the local produce was at the heart of the menus as Michael has always held a passion for. The future of food and farming in a sustainable world
Michael believes that the future of food and the challenge of feeding our planet depends on an equitable and sustainable food system that works for all: producer and consumer alike. How can this be addressed practically while considering the need for affordable food and also for keeping our planet safe is a topic that gives much food for thought.
Michael works with local farmers and food producers to champion indigenous & heritage of breeds, and promote local produce. He works with the Devon County Show and local farming community to celebrate bio-diversity; promote the protection of our ancient woodlands, orchards, wetlands and grasslands; and is part of the conversation regarding regenerative farming methods and the ever growing need for sustainable food production.
Food, provides us with an opportunity to celebrate the bounty of our lands, gifting the regional chefs with a unique and precious gift, who in turn curate wonderful meals that create a sense of place and taste. Creating food memories that live on beyond the region and indeed last a lifetime.
Overcoming adversity to follow your dreams

Private Masterclass with

What could be better than a Private Masterclass with Michael himself, one of Britain’s most acclaimed and popular chefs? Michael won and retained two Michelin stars for 18 years and since opening Lympstone Manor in 2017 has held 1 Michelin star (in 2024 he has also earned 2 Michelin Keys). Michael is a natural leader and a patient teacher (as any who have seen him in a mentoring role on television will know this). He is happy to welcome small groups in Lympstone Manor.
A typical Private Masterclass might include tea/coffee on arrival, a tour of the Lympstone Manor kitchens, a hands-on cooking demonstration by Michael, followed by lunch in the Berry Head, Mamhead or Powderham dining rooms. Alternatively, Michael may be available to come to your own home to teach you some of his signature dishes.
