Sustainability has always been held as a key passion of Michael’s. His belief that the South West, his home; has one of the best larder’s in Europe from both land and sea and championing the bounty of the area through a seasonal approach of his menu’s and indigenious and heritage breeds and varieties. Building long standing connections with farmers, fisherman and butchers to ensure a sustainable fishing and farming approach is taken to sourcing the ingredients from his cuisine and learning from them the abundance or danger to the natural resources we have.
Michael expresses his style as ’Terroir Cuisine’. Utilising the bounty of the South West, his faultless cuisine reflects seasonality, sense of place, regionality, and creativity.
Michael’s flagship hotel Lympstone Manor; is a proud member of Relais & Châteaux, Established in 1954, the Relais & Châteaux Association unites an exceptional collection of 580 hotels and restaurants throughout the world, operated by independent owners. Embodied by men and women – most often families – they are deeply committed to sharing their local culture as well as their passion for what is good and beautiful.
Michael is the UK & Ireland Delegate for Relais & Chateaux; forming part of the Board of Directors is also a proud member of the World Culinary Council. The Relais & Châteaux World Culinary Council is a think tank formed of 21 visionary chefs from Relais & Châteaux, chaired by Vice President Chef Mauro Colagreco. This global collective is dedicated to pioneering innovative culinary approaches, advancing gastronomy and sustainability, and shaping the future of food within the Association and beyond. Each World Culinary Council member is appointed alongside their region’s Delegate, becoming ambassadors for chefs in their area. Representing a global network of over 500 chefs, their mission is to foster engagement and drive forward Relais & Châteaux’s shared commitment to creating a better world through cuisine and hospitality.
Through Michael’s passion and leadership, his flagship hotel; Lympstone Manor, is deeply committed to creating a more sustainable and equitable world through the art of hospitality and cuisine. Their Sustainability Plan aligns with Relais & Châteaux’s “In Harmony With All Life On Earth” initiative, built upon 12 commitments to sustainability and pledged to UNESCO in 2024.
Through goals and actions across environmental, social, and economic sustainability pillars, Lympstone Manor aim’s to build a more respectful, united, and sustainable world, in harmony with all life on Earth.
