Michael and his team have helped to develop a relaxed and friendly dining experience. Michael mentored Head chef Gareth Stevenson for many years and so was proud for Gareth to take on the reins at the helm of the Palé kitchen. Gareth worked closely with with local farmers, growers, fishermen and food producers in North Wales to ensure that the local produce was at the heart of the menus as Michael has always held a passion for. Under Michael’s guidance, Gareth has created a creative menu with his own personality and vision emerging through each of the dishes.
Palé Hall has three dining rooms. the library is suited for small and intimate occasions, with seating from two to twelve. Venice is a room transformed from the original kitchen, complete with the original range but now an elegant room with a theatrical venetian theme. This room can seat up to twenty five as a private dining space. The Henry Robertson dining room can be booked for larger private functions and can seat forty comfortably in banquet style. With its ornate plaster ceilings, grand fire place and carved buffet, this room is designed to impress and is the perfect place for a wedding buffet, a corporate lunch or large family gathering
