Executive Chef Toby Lin
Toby Lin is the newly appointed Executive Chef at the Michael Caines Restaurant at ABode Canterbury. Toby replaces Mark Rossi, who was the Executive Chef since ABode Canterbury was launched in 2006.
Toby studied catering at Exeter College, and afterwards moved to Padstow to work under Rick Stein in the acclaimed Seafood Restaurant. He then moved to The Square in London, before returning to Exeter where he worked for two years in the Michael Caines Restaurant at ABode Exeter. When ABode Canterbury was opened in 2006, he moved to the Southeast to work under Mark Rossi.
"When the opportunity to become Executive Chef was offered to me I was delighted and thrilled to accept the position," says Toby. "I feel that the timing is right, after working with Mark and for Michael for nearly 6 years. Their knowledge and guidance has been the driving force behind my rise through the ranks of the MC restaurants, starting as Chef de Partie at Exeter, then coming to Canterbury as the Junior Sous, and finally now Executive Chef. Filling the shoes of Mark will be a hard act to follow. We've known each other for over 7 years since we met in the kitchen of The Square, and I will be sad to see him go. But his departure provides me with a brilliant opportunity to demonstrate that Michael Caines at ABode Canterbury is definitely still the best restaurant in Canterbury!"
